Place apple slices in a large bowl. Stir in the dry filling ingredients and toss until apples are evenly coated. Set mixture aside.

For the crust, mix together flour, salt, and baking powder. Cut in shortening. The resulting mixture should be the texture of cornmeal.

In a one-cup measuring cup, beat together vinegar and egg. Then fill it to one cup with cold water.

Combine the dry and wet ingredients and form into two balls—dough will be soft and sticky.

On a well-floured board, roll out a disk of dough, roughly 12 inches in diameter. Transfer to a lightly floured, 9-inch pie plate. Roll the remaining dough into another disk and set aside.

Mound the apple and sugar mixture into the pie pan. Dot with 2 tbsp. butter.

Cover with the remaining dough and trim the edges. Chill 30–40 minutes before baking.

Heat oven to 425 degrees and bake for 1 hour.
